or more commonly known as Buckeyes are a yummy and easy to make treat any time of the year.
Combine 1/2 cup peanut butter (creamy or chunky), 1 cup sifted powdered sugar and 3 Tbsp softened butter. Mix until well-combined. Shape 2 Tbsp at a time into 'eye balls' and place on a wax paper lined cookie sheet. Repeat until you've used all your dough. Place cookie sheet filled with 'eye balls' into the freezer. Freeze for about an hour or until firm.
Right before you take the 'eye balls' out of the freezer, melt 8 oz of semi-sweet chocolate chips (I use the microwave but you can use a double-boiler if you prefer). Stir every 30 seconds (if using microwave) until chocolate is melted.
Using a toothpick, dip each 'eye ball' into the melted chocolate and place back onto wax paper lined cookie sheet.
Any left-over 'eye balls' can be stored in the freezer (IF you have any, that is!)
