My grandfather always had a huge garden! He was so crippled with arthritis that he walked most days with two canes, but could be seen most everyday with a cane in one hand and a hoe in the other, puttering around in the garden. To my dying day I believe that is how I will remember this great old man.
About this time of the year it is time (at least in this part of the country) to start 'cleaning out the garden'. This recipe for Freezer Coleslaw helps to use-up those veggies!
Freezer Coleslaw
- 1 medium head of cabbage
- 1 tsp salt
Shred cabbage and sprinkle with salt. Let this stand (sit) 1 hour, then squeeze out all the liquid (and you will be surprised how much there will be, too!!)
Add to cabbage:
- 1 shredded carrot
- 1 shredded green pepper
For the dressing, mix together and boil for 1 minute:
- 1 cup white vinegar
- 1/4 cup water
- 2 cups sugar
- 1 tsp celery seed
- 1 tsp dry mustard
Pour the dressing over the shredded cabbage mixture, package (freezer bags or containers) and freeze.
When you thaw out a package of this slaw even at Thanksgiving or Christmas it isn't mushy or soggy and reminds you of warm summer days!
