Dog days of summer are here and I don’t know about you, but after a long, hot day at work I don’t feel much like cooking when I get home. With this recipe for oven barbecued pork chops you won’t be standing over a hot stove for long, although you will have to have the oven on for about 45 minutes. Trust me, it’s worth it for these chops!
Oven Barbecued Pork Chops
- 6 center-cut pork chops, (trim the fat)
- 1 tablespoon vegetable oil
- One 14 and ½ ounce can crushed tomatoes
- ½ cup ketchup
- ¼ cup dark brown sugar
- 3 tablespoons Worcestershire sauce
- 2 tablespoons regular mustard
- Dash of All Things Southern Hot Sauce (or preferred sauce)
- Salt and pepper to taste
While you preheat the oven to 350 degrees, brown the pork chops lightly on both sides in a little vegetable oil. Remove from skillet and let them drain while you mix up the sauce.
In a mixing bowl, combine the can of crushed tomatoes, ketchup and brown sugar. Season this with Worcestershire sauce, mustard, hot sauce and salt and pepper to taste. Stir together well.
That’s it!! Layer the chops in the bottom of a 9x13 baking dish, spoon the sauce over the top and bake for about 45 minutes.
