After shamelessly neglecting my blog for the last week or so, I wanted to share a great, easy recipe for a delicious dish I fixed for dinner last night! The kids gobbled it up and loved it; so did the adults! I can't take credit for this recipe, since it was sent to me by Kate over at I Think Therefore I Blog in her Home Helper weekly newsletter. Creamy Black Bean Chicken
Place 4 frozen chicken breasts in bottom of your crock pot. Top with 1 can black beans, 1 can of corn, 1 (15 oz) jar mild salsa, 1/2 tsp garlic powder and a dash of chili powder. Cook on high 5 hours then turn crock pot off. Drain slightly. Throw in an 8-oz block of cream cheese on top. Don't stir. Let sit 30 minutes before serving.
