A quick fix in the summer when all the fresh ingredients are on hand in the garden.
- Italian or French bread, cut into 1-inch slices
- 2 large tomatoes, coarsely chopped
- 1/2 sweet onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh basil
- 2 tablespoon chopped fresh parsley
- 1 clove garlic, diced
- 1/4 cup freshly grated Parmesan cheese
The original recipe says to preheat oven to 400 degrees F, lightly coat bread with a small amount of olive oil and bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. In the summer, it's just as easy to pop your slices of bread in the toaster and toast them (not to mention ya don't have to heat up the kitchen!). In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil, parsley and garlic. This is better if you mix it up ahead of time and let it set in the frig for at least an hour or two. When ready to serve, top your toasted bread slices with tomato mix and sprinkle with Parmesan cheese. Yummy, quick and easy but oh so good to eat. I can make of meal of this stuff, along with a nice bottle glass of wine!
