
Beautiful green Granny Smith Apples remind me of summer. They also make a quite tasty sweet apple salad that is quick and easy and oh so yummy!!
Sweet Apple Salad
- 1 (20 ounce) can pineapple tidbits (save juice!)
- 1/2 cup self-rising flour
- 3/4 cup sugar
- 4 medium green apples, peeled and chunked
- 1 (8 ounce) Cool Whip
- 1/2 cup pecans
Drain the can of pineapple, reserving the juice. To this juice add your flour, sugar and a pinch of salt, mixing as you go (I use a whisk). Cook this mixture over medium heat until it thickens up. It will look like pudding when it is done. (Remember to stir constantly so it won't stick!)
When it gets thick (about three or four minutes) turn it off and set it aside to cool.
Meanwhile, add the apple pieces into a casserole dish and stir in the pineapple tidbits. Then fold in the cooled pudding and top it with cool whip. Sprinkle pecans pieces on last and cover. Put salad in the fridge until ready to serve.
