Chicken & Corn Stuffing Bake

Okay, first and foremost let me say, I found this recipe on the box of StoveTop Stuffing.  But it is delicious and best of all, the kids loved it and got their veggies!!

Chicken & Corn Stuffing Bake

  • 1 pkg (8 oz) Stove Top Stuffing Mix for Chicken
  • 2 lb boneless skinless chicken breasts, cut into bite-size pcs
  • 1 1/2 cups hot water
  • 1 can (10 oz) Cream of Chicken Soup
  • 1 pkg (16 oz) frozen stir-fry veggies, thawed
  • 1 bag (16 oz) frozen corn, thawed, drained

Preheat oven to 400 degrees F.  Sprinkle 1/2 cup of the dry stuffing mix evenly onto bottom of 12x9 inch baking dish; top with chicken.  Add hot water to remaining stuffing mix; stir just until moistened. Set aside.

Mix soup, stir-fry veggies and corn; spoon evenly over chicken. Top with prepared stuffing.

Bake 30 minutes or until chicken is cooked through.

You can add or delete or modify this to suite your taste. I omitted the corn and substituted cream of chicken and mushroom soup and it came out great. Best of all it's quick, easy and all you need is a drink and a desert and you're good to go for a busy evening!
