Banana Bread

BananabreadWe all like bananas around this house. Besides being yummy, they are a quick fix for shutting up a hungry whining kid. Hungry? Here, zip, peel, stick this in your mouth and dinner will be done when it's done!  But sometimes the 'nanners get a little too ripe and nobody will eat one if the peeling is brown. Yuk, grammy, that looks gross!!  He he he my little pretties, you will eat the brown ones,  you just won't know it! I'll just mash them up and bake them into another treat, banana bread. This is a quick, easy recipe (I don't use any other kind!).

Banana Bread

  • 1/2 cup shortening
  • 1 1/3 cup sugar
  • 2 large bananas (sliced)
  • 2 T milk
  • 2 eggs
  • 1 3/4 cups flour
  • 1/2 tsp soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp nutmeg

Cream the shortening and sugar. Add the bananas and milk. Mix well with mixer, then add eggs and blend. Add the dry ingredients (if using self-rising flour, omit soda and baking powder). If desired, add 1 cup chopped nuts.  Pour into a greased bread pan  and bake for 30 minutes at 350 degrees, the 325 degrees for 15-20 minutes or until done.

There you go, quick and easy. You can eat this hot with melted butter or cold almost like a cake. One way to save a nickle or dime and not have to through out mushy bananas.  (of course, if the fruit flies have already been circling for a few days, you may want to reconsider using those bananas!)
