Christmas Breakfast

Try this after all the presents are open on Christmas morn' (or any morn' for that matter!) These may be the best scrambled eggs you ever eat!

Splendid Sage-Scented Scramble
Ingredients:
1/4 cup packed fresh sage leaves, coarsely chopped
3 Tbsp boiling water
9 large eggs
scant 1/4 cup freshly grated Parmigiano-Reggiano cheese
1/2 tsp salt
2 Tbsp unsalted butter

(Do this ahead of time!) Measure the 1/4 cup sage in a heatproof glass measuring cup. Add boiling water and let steep for half-hour. Transfer sage-water mixture to a blender and blend on high speed until smooth. To remove remaining solids, pass the blended mixture through a strainer lined with a paper towel. Before finishing, squeeze the towel to extract as much sage extract as you can. Discard towel and sage solids.

In a mixing bowl, beat together the eggs, cheese, salt, and two and one-half (2 1/2) teaspoons of sage extract.

Scramble the eggs over medium heat as you normally would. Take care not to overcook them. Serve immediately.

Tightly seal extra sage extract and store in the freezer for up to 4 weeks. Enjoy!
