Over the past weekend, we visited a village that had been restored to the 1800's era. While there, we got to sample a cake hot out of the "oven". Here our modern housewife is checking with a clean broom-straw if the cake is ready to serve,,,and it was! Pretty yummy, too! So here's the recipe for
Kentucky Butter Cake
Grease and flour 2 (8 inch) round pans. Preheat modern oven to 325 degrees.
Sift together:
- 3 cups flour
- 3/4 t salt
- 1/2 t baking soda
Cream:
- 1 cup butter (or margarine)
- 2 cups sugar
- 4 eggs
Combine:
- 1 cup buttermilk
- 2 t vanilla or rum flavoring
Add the flour mixture alternately with the buttermilk to creamed mixture. Pour into baking pans, bake for 35-40 minutes. When done, remove the cake from the pans to cooling rack. May be served with the following sauce poured over the cake.
Sauce
- 1 cup sugar
- 1/4 cup water
- 1/2 cup butter
Cook-do not boil. Add 1 t vanilla or rum flavoring.
